Satay Beef Stew Recipe

Ingredients:

  • 800g Beef Rib Joint, cut into chunks

  • 500g Mooli (or Turnips), peeled and cut into thick pieces

  • 1 Medium Onion, finely chopped

  • 1 whole Garlic Bulb, peeled and minced

  • 15-20g Unsalted Butter

  • 2 Tablespoons Satay Sauce, 60g

  • 1 Tablespoon Oyster Sauce, 30g

  • 1 Tablespoon Soy Sauce, 30g

  • 1 Teaspoon Sugar

  • 4 Star Anise

  • 4 Bay Leaves

  • Water, enough to cover ingredients

  • White Wine (or Cooking Wine), a splash

  • Black Pepper, to taste

Instructions:

  1. Sear the Beef:

    • Heat the unsalted butter in a large pot over medium heat until melted.

    • Add the beef rib joint chunks and sear until the surface develops a golden-brown crust. Push the beef to one side of the pot.

  2. Sauté Aromatics:

    • Add the chopped onion and minced garlic to the empty side of the pot.

    • Stir-fry until they turn golden and release their fragrance.

  3. Add Seasonings:

    • Add the satay sauce, oyster sauce, soy sauce and sugar.

    • Pour in enough water to just cover all the ingredients.

    • Add star anise, bay leaves and a splash of white wine. Mix well.

  4. Simmer the Stew:

    • Bring the mixture to a boil over high heat, then reduce to low heat and simmer gently for 1 hour, stirring occasionally to prevent sticking.

  5. Add Turnips:

    • Add the mooli pieces and continue simmering for an additional 30 minutes, until the mooli and beef are tender.

  6. Season and Serve:

    • Before serving, season with black pepper to taste.

    • Serve the stew hot, paired with steamed rice or crusty bread.

Tips:

  • Stir occasionally to prevent the stew from sticking to the pot.

  • Ensure the liquid level remains just above the ingredients throughout cooking, add more water if necessary.

Enjoy this rich, flavorful dish!
